Strawberry Rustic Tart
Use any frozen or fresh fruits for this recipe. Berries and stone fruits work great - adjust the sugar quantity depending on the sweetness of your fruits. Use less starch for firm fruits like apples and pears.
Strawberry 400g / 2 1/2 cup
Sugar 72g / 1/3 cup
Tapioca or corn starch 18g / 2 1/2 TBSP
Lemon juice 5g / 1 tsp
Mix the sugar and starch together.
Add to the fruits and combine together. Mix in lemon juice.
Portion the mixture on rolled pie dough. Fold in the edges of the dough.
Apply egg wash and sprinkle with sugar.
Bake at 380F for 35-40 min, or until the top is browned and the bottom is crispy.
Serve with a scoop of ice cream or lightly sweetened whipped cream!
