Having trouble with your dough sticking to baskets? Here are some tips:
- Make sure that your baskets are completely dry and brushed clean from previous usage. - Do not over work with your dough when shaping. Once the skin on the dough tears, it becomes sticky.
- For a soft dough, use a plenty of dusting flour during shaping and inside of basket.
- Use a flour blend with rice flour inside of baskets, such as 1:1 Bread flour : Rice flour / 1:1:1 Rice flour : Rye flour : Wheat bran flakes
- Consider lowering the hydration of your dough next time. Remember, wetter is not always better!
