Simple pizza dough formula that you can make at home.
Flour 500g / 3 1/2 cup
Water 338g / 1 1/2 cup
Yeast 3g / 3/4 tsp
Salt 10g / 2 tsp
Olive oil 25g / 2 TBSP
Combine everything but the oil in a bowl. Mix until flour is hydrated.
Add oil, and mix until the oil is well combined with the dough.
Knead the dough until the dough is smooth. Pull a window pane to check the doneness. The window should be almost transparent.
The dough can be mixed in a mixer with a hook.
After mixing, divide and round the dough immediately. Place on an oiled tray, cover and refrigerate.
You can use the dough on the same day, and it keeps well in the fridge for 7 days. We found it works best after 2-3 days in the refrigerator.
