Liege-style yeasted waffle
Milk 180g / 3/4 cup
Honey 50g / 2 1/2 TBSP
Vanilla extract 8g / 2 tsp
Egg yolks 80g / yolks of 4 large eggs
Flour 350g / 2 3/4 cups
Salt 8g / 2 tsp
Dry instant yeast 16g / 1 1/2 TBSP
Unsalted butter 160g / 1 1/2 sticks
Pearl sugar 300g / 1 3/4 cups
In a mixer fitted with a paddle attachment, combine all of the liquid ingredients.
Add the flour, salt and yeast on top.
Mix until the batter comes together. Scrape occasionally.
Add softened butter. Mix until combined.
Add the pearl sugar, and mix until combined.
Cover the bowl and let it rise at room temperature for 1-1.5 hours.
Cook the batter on a hot waffle maker. Serve warm.
