Divide the egg bread dough at 60g pieces. Preshape into rounds.
Cover and rest for 20-30 min.
Round the dough again, and roll the dough to 3" discs.
Apply egg wash and proof at 80F for 2-3 hours.
Before baking, apply egg wash again and make a well in the center of the dough.
Pipe pastry cream inside, and sprinkle the edge with streusel and coarse sugar.
Dust the filling generously with powdered sugar.
Bake at 400F for 8-10 min.
