Buttermilk Waffle

Buttermilk Waffle

Flour 355g / 2 3/4 cups
Baking powder 14g / 4 tsp
Baking soda 4g / 1 tsp
Salt 8g / 1 1/4 tsp
Egg yolks 75g / yolks from 4 eggs
Butter, unsalted 115g / 1 stick
Sugar 1 45g / 3 TBSP
Buttermilk 800g / 3 cups
Vanilla extract 12g / 1 TBSP
Egg whites 120g / whites from 4 eggs
Sugar 2 15g / 1 TBSP

Sift the flour, baking powder, baking soda together. Add salt and combine.
Whisk together egg yolks and sugar 1 together. Add the melted butter, buttermilk and vanilla extract. Mix to combine.
Add the dry ingredients into the liquid mixture. Whisk together to combine. Do not over mix.
Whip the egg whites with sugar 2 until soft peak is achieved.
Fold the whipped egg whites into the batter.
Cook the batter in a hot waffle maker.
