How to shape batards
There are many ways to shape batards, and this is one way that we teach in our artisan courses.
First, preshape the dough into boules and rest for 20-30 minutes.
Next, turn the dough upside down so that the smooth side is facing down and seams facing up.
Stretch the dough sideways gently, and fold to the center. Create an A-like shape that tapers to the top. Pat it down to create a flat surface.
Roll the dough down from the top, creating a tension at each roll. Seal the seam with the heal with your right hand.
Avoid using fingertips when applying pressure against the dough, as it can tear the surface.
