Steel Blade holder is used to clip on a double edged razor blade for scoring bread. It has a flexible head and any standard razor blade can fit. What is use now for “blade holder” was actually the lame ( clase, baker were using to score the bread specially large loaves. When the bread in small town were baking in a common oven, the scoring pattern was to identify who’s bread belong to who, since all the bread from the village were baking together, usually during mass on Sunday The two edge razor blade, start to be used when baguette start to be produce in Paris, since the loaves were smaller the cu need to be sharp and clean.
